Dandelion Greens Recipes for Spring Detox

Spring is a wonderful time of year to reset our body and our health. We often think of a “spring detox” for our home, but I also encourage us to think about resetting our body the way we think about cleaning up our home. Dandelion Greens incorporated as part of for your spring detox are an excellent way to aid the body in natural detoxification.

The major organs for detoxification include;

- intestinal tract
- liver
- skin
- lymphatic system

All these organs need to be optimized for optimal digestion and detoxification. Aiding in regular bowel function is one of the key starting points for many of my patients. You need a minimum of one bowel movement a day and up to 3 a day is considered normal.

Skin conditions such as eczema and acne can sometimes stem from poor detoxification and also be related to hormonal changes.

All dark green vegetables but especially dandelion leaves are an abundant source of fibre and phytonutrients, vitamins, and minerals, especially vitamins A, C, and K, and are good sources of calcium, potassium, iron, and manganese.  Some examples of other dark green vegetables include: rapini, bok choy, arugula, mustard greens, broccolini, kale, etc. Aim for at least 1-3 servings a day of dark green veg.

Green shakes and salads are two of my favourite ways of using dandelion greens. Dandelion shakes are delicious and an excellent tonic for your liver and digestive system[.](https://www.workwellremote.com/) They have a slightly bitter taste which if you’re not used to can be overwhelming so I encourage adding fresh or frozen fruit to dull some of the bitterness. But also remember that bitter greens are a great way to stimulate bile production in our liver to aid in digestion.

## Dr. Amy’s Dandelion Greens Shake

Ingredients:

– 2 cups of chopped dandelion greens

– 2 cups of mango or pineapple (fresh or frozen)

– 1 apple (seeds and core removed)

– Juice of 1 lemon

– 1/3 cup of apple juice (or omit if you are ok with the bitterness but I add this if I’m giving it to the kids.)

– 3 cups of water

Directions:

-Combine all ingredients in a blender and puree on high speed until smooth.

-Serve immediately and enjoy! (This is a favourite with the kids!)

## Dr. Amy’s Dandelion Salad

Ingredients:

– 1 tbsp of finely chopped garlic cloves or scapes

– 1/2 tsp of coarse sea salt

– 1/4 cup of extra-virgin olive oil (use only cold-pressed and in glass containers)

– 1 tsp of fresh lemon juice

– 1/4 tsp of granulated sugar

– 8 cups (4 ounces) of dandelion greens, large leaves torn in half (you can also mix the dandelion greens with other salad greens like romaine lettuce for an delicious mix)

Directions:

– Combine garlic, lemon juice, salt, and sugar in a bowl. Whisk until combined. Drizzle olive oil in a slow steady stream, whisking until emulsified.

– Place dandelion greens in a salad bowl. Drizzle dressing over greens and toss to coat. Serve immediately and enjoy.
